INGREDIENTS:
1. 2 cups Rice
2. 1/4 cup Carrot, peeled and diced
3. 1/4 cup Potato, peeled and diced
4. 1/4 cup Green Peas
5. 1/4 cup French Beans
6. 2 tbsp Ginger-Garlic paste
7. 3 Cloves(lavangamulu)
8. 2 Cardamoms(yalukalu)
9. 1 long Cinnamon stick(dalchina checka)
10.2-3 Green chillies chopped finely
11.1 Onion, chopped finely
12.10-12 fresh Mint leaves
13.2-3 springs Coriander leaves
14.10-12 Cashew nuts
15.Salt to taste
16.Ghee or Oil for cooking
Procedure:
1.Wash and soak rice.
2.Add oil to a heavy bottom cooking vessel and add chopped onions, cloves, cinnamon stick, cardamoms and half of the mint leaves.
3.Saute for a while and add green chilli, diced carrots, potatoes, peas and french beans. Stir well.
4.Cover and cook till the raw smell of the vegetables disappears.
5.Now add cashew nuts and saute for a while.
6. Now add water (depends on the quantity of rice you use) to the above mixture and add salt, coriander leaves and ginger-garlic paste.
7.Cook covered till the water starts to boil. Now add soaked rice and cook till rice gets completely cooked.
8.Garnish with coriander and mint leaves before serving.
9.Serve hot with Aloo Khorma and Dahi Ki Chutney.
